Fructose is a naturally occurring fruit sugar found in many fruits and vegetables but predominantly in honey, which contains over 40% fructose.

It is a hexose (5-carbon sugar) monosaccharide and is produced commercially by Danisco's sweeteners division from sugar beet as Fructofin®.
Crystalline fructose is the sweetest of all natural sugars and has a greater sweetness than any other bulk sweetener. This means that less can be used to achieve any level of sweetness, thus enabling calorific savings to be made without compromising taste.
It is metabolised independently of insulin and as such is recommended for the diabetic diet. It has a low glycaemic index of 19, ideal for today’s aspirational healthy living. It also improves the satiating effect of food enabling reduced quantities to be consumed at meal times.

Application areas
Fructose is used globally in many applications for its health, nutritional and functional characteristics.
These advantages stem from the body’s physiological response to fructose and it is beneficial to slimmers, sports men and women, the clinically obese and non-insulin dependant diabetics.
Sports drinks made with fructose can help rehydration by allowing faster gastric emptying than drinks made with sucrose or glucose.
Fructose can also enhance flavour profiles, for example chocolate, jams and fruit preparations. It is beneficial in frozen products due to its high freezing point depression, rendering the product easier to scoop straight from the freezer.
